Potassium sorbate

A preservative that is mainly effective against fungi and yeasts, but not so effective against bacteria.
Potassium sorbate is the potassium salt of sorbic acid, but is more practical than sorbic acid in aqueous phase uses because it is much more soluble. Potassium sorbate has antifungal and antibacterial properties as a preservative in the food industry. It is mainly used in the dairy sector due to its strong ability to protect against mould (also in baked goods), but is also used in the confectionery, beverage and wine sectors. Its antifungal power is equal to that of benzoates, or even higher at pHs between 4.0 and 6.0 (the indissociated form is therefore more active than the dissociated form). This characteristic corroborates its antifungal properties, since moulds, unlike bacteria, grow predominantly in acidic environments rather than on alkaline matrices.

Dissolve in the aqueous phase and homogenise to the mass.
