Granular fructose (levulose) is a type of sugar obtained exclusively from glucose extracted from sugarcane. The fructose molecule is levogyrous, which means that the rotational power of the optically active carbon ring occurs counterclockwise. This type of sugar is used in the food industry as a sweetener, often replacing sucrose (common sugar) because fructose has a higher sweetening power and lower caloric intake.
