Vinoferm Variety Flavor

Saccharomyces cerevisiae yeast selected for the vinification of grape varieties particularly characterized by their varietal aromatic equipment.
Vinoferm Variety Flavor is a yeast strain specifically selected to preserve and enhance the varietal aromatic characteristics of specific grape varieties. This yeast strain was chosen for its ability to work on glycosylated sugars, releasing volatile aromas and helping to enhance and preserve the unique flavor profile of such varietals. Some of the main features and advantages of Vinoferm Variety Flavor:
  • β-glycosidase activity: the main characteristic of this yeast strain is its β-glycosidase activity. This means that it is able to act on the glycosylated sugars present in grapes, releasing the volatile aromas related to these sugars. This activity is essential for preserving and enhancing varietal aromatic characteristics.
  • Respect for the aromatic kit: Vinoferm Variety Flavor is designed to respect and enhance the specific aromatic kit of a given grape blend. This means that, when used in the winemaking of that particular grape type, it will help enhance its distinctive characteristics without distorting them.
  • Wine typicality: this yeast strain aims to represent the typicality of the wine, making it recognizable and enhancing it. This is especially important in blends where the aromatic bouquet is a distinctive feature of the finished product.
