Stabigum

Microfiltered and purified solution of Seyal short-chain gum arabic. Because of its stabilizing properties, when added to wines it prevents turbidity and colloidal-type deposits, keeping them perfectly clear.
Stabigum® is is a filtered and purified solution of Seyal-type gum arabic (dextrogyra), also known as short-chain. Here are some of its main characteristics and applications:

  • Composition and solubility: microfiltration at 0.1 µm ensures the sterility of the product, and due to this narrow filtration, the filterability index of wines is not significantly affected. This makes it addable even before the last filtration step.
  • Role as a protective colloid: Stabigum acts as a protective colloid in wines. It is composed of an arabinogalactan II-type polysaccharide associated with a glycoprotein. This combination gives the product exceptional anticoagulant protective power, especially against polyphenolic substances, including low molecular weight and protein substances, in both white and red wines intended for aging.
  • Prevention of turbidity and colloidal deposits: by adding Stabigum to wines, turbidity and colloidal-type deposits can be prevented, helping to preserve the clarity of wines and preventing alterations due to ferric and copper cases.
  • Improved smoothness and velvety texture: Stabigum has the ability to improve the smoothness and velvety texture of wines, both white and red, helping to make wines more palatable.
  • Prevention of tartaric stability: in synergy with metatartaric acid, Stabigum helps prevent tartaric instability phenomena in wines.

40-150 ml/hl to prevent protein and copper casses and dye precipitation
80-100 ml/hl to improve tartaric stabilization in combination also with metartaric acid
Preliminary laboratory tests are recommended for optimal dosages.
Warning: 100 ml/hl of Stabigum provides about 4 mg/l of SO2.

Stabigum should be added to wine before or after the last filtration or microfiltration leading to bottling. Do not make clarifications after the addition of Stabigum.
