Gran Ossitan

Formulated product composed of high-purity granular gall tannin and ascorbic acid. It ensures complete absence of color influences after addition and rapid and complete solubility.
Gran Ossitan is a formulated product that contains high-purity granular gall tannin and ascorbic acid. These components act synergistically to perform several functions in winemaking:

  • Absence of influence on color: Gran Ossitan is formulated so that it will not affect the color of the wine after addition. This means that it will not significantly alter the hue or clarity of the wine.
  • Antioxidant action: gall tannin and ascorbic acid act as powerful antioxidants. This is important because they protect wine from oxidation, which is one of the main factors that can compromise the quality and stability of wine. Oxidation can lead to undesirable changes in the color, aroma and flavor of wine.
  • Reduction in sulfite use: the use of Gran Ossitan can help reduce the need to add sulfites (sulfur dioxide or SO2) as a preservative. This is an advantage, especially for those who wish to reduce the use of sulfites in their wines.
  • Oxygen Scavenger Action: the ascorbic acid present in Gran Ossitan acts as a scavenger of the oxygen present in the wine. This means it captures oxygen, which is a major cause of oxidation, and converts it to dehydroascorbic acid.
  • Synergistic role of gall tannin: Gall tannin works synergistically with ascorbic acid as an oxygen scavenger. This oxygen will then be degraded by the proanthocyanidins naturally present in the wine, thus helping to keep the wine protected from oxidation.
  • Preventive use: Gran Ossitan can also be used as a preventive remedy against oxidation directly on grapes, prior to the winemaking process.
