Glutathione

Tripeptide with high antioxidant power acting on the prevention of quinone oxidation. It also acts as a fermentation activator.
Glutathione (L-g-glutamyl-cysteinyl-glycine) is a tripeptide consisting of three amino acid units: glutamic acid, cysteine and glycine.
This molecule shows strong antioxidant power: In fact, it reacts with quinones, preventing their agglomeration (the cause of browning in oxidized musts and wines) and the oxidation of aromatic compounds.
Glutathione exerts a protective effect against thiol aromas, acting as a competitor for quinone reduction.

Pure glutathione in the form of a white crystalline powder.

15-20 g/hl.

Dilute in 1:10 proportion and add the resulting solution to the mass to be treated.
