Fizzferm

Saccharomyces bayanus yeast specifically selected for sparkling wine production using the classic or Charmat method.
Fizzferm is a strain of Saccharomyces bayanus specially selected for the production of sparkling wines, either by the classic or Charmat method. Its main characteristics include:

  • High aromatic finesse: Fizzferm is known to offer a refined flavor profile, which is essential for the production of sparkling wines with complex and delicate flavor profiles.
  • Wide resistance to pressure and temperature: this yeast strain is characterized by a remarkable ability to operate in a wide range of pressures and temperatures. This versatility is crucial for achieving effective frothing in both the classic and Charmat methods.
  • Respect for the characteristics of the sparkling wine base: Fizzferm is designed to respect the peculiarities of the sparkling wine base. This means that it does not contribute excessively to the fermentation aromas, allowing the bouquet of the wine to emerge without distorting the typical characteristics of the grape variety.


Fizzferm’s main goal is to ensure the production of high-quality sparkling wines with reliable frothing and a fine, well-balanced flavor profile.

5 to 10 g/hl for frothing.

  1. Add in lukewarm water (35 – 40°C) at a ratio of 1:10 and wait 15 minutes, shake gently
  2. Add must one-third by volume of the water and yeast suspension, shake gently and wait 15 minutes
  3. Inoculate the yeast into the mass, taking care that the temperature difference between the wort and the yeast suspension is no more than 10°C.

Vacuum-packed bag of 0.100 kg and 0.500 kg, bulk of 10 kg.
Store in a cool, dry place, preferably at a temperature of 10°C.
