Enological yeast strain selected for the production of white and rosé wines with an intense, fresh flavor profile and very low production of hydrogen sulfide and acetaldehyde.
Esoticferm is a strain of Saccharomyces cerevisiae specially selected and tested to emphasize tropical and citrus aromas in wines. This yeast is ideal for making white and rosé wines that are distinguished by freshness and aromatic complexity. Esoticferm is known for its ability to minimize the production of hydrogen sulfide and acetaldehyde, ensuring wine quality. Key characteristics of Esoticferm include:

  • Tropical and citrus aromas: Esoticferm is specially designed to accentuate tropical aromas such as mango, papaya, and citrus such as grapefruit and passion fruit in wines.
  • Fresh and aromatic wines: this yeast contributes distinct freshness and complex aromatic notes to wines that enrich the taste experience.
  • Low defect production: Esoticferm is known for its ability to minimize the production of hydrogen sulfide and acetaldehyde, two undesirable compounds in wines.
  • Optimal parameters: for optimal results, it is recommended to conduct fermentation at temperatures between 16 and 18°C and maintain a turbidity of about 50-60 NTU.

20 to 30 g/hl, depending on the type of use and the judgment of the winemaker.

  1. Add in lukewarm water (35 – 40°C) at a ratio of 1:10 and wait 15 minutes, shake gently.
  2. Add must one-third by volume of the water and yeast suspension, shake gently and wait 15 minutes.
  3. Inoculate the yeast into the mass, taking care that the temperature difference between the wort and the yeast suspension is no more than 10°C.

0.100 kg and 0.500 kg vacuum bag, 10 kg bulk.
Store in a cool and dry place, preferably at a temperature of 10°C.
