Dry-Mix is a balanced formulation developed to improve yeast efficiency during must fermentation by ensuring adequate supply of essential nutrients and growth factors. This helps prevent fermentation stuckness and the production of hydrogen sulfide, an undesirable rotten egg flavor. Key benefits of Dry-Mix include:

  • Essential nutrients: Dry-Mix contains dietary ammonium phosphate and sulfate, yeast autolysate, providing a balanced source of amino acids, polysaccharides, sterols, fatty acids, vitamins and minerals essential for yeast growth.
  • Adsorbent for inhibitors: the formulation also includes cellulose, which acts as an adsorbent for fermentation inhibitors, providing a favorable environment for yeasts.

Dissolve the dose of Dry-Mix in water, then add it to the mass to be fermented immediately after yeast inoculation. Do not dissolve in yeast rehydration water.
