Complex Gum® is a Seyal gum arabic with high stabilizing power that is particularly effective in preventing the formation of potassium bitartrate in wines. This gum arabic is a unique product specially developed to ensure tartaric stability of wines over time. Key benefits:

Powerful stabilizer: Complex Gum stands out for its ability to break down the conductivity (μS) of wines, ensuring their stability over time.
Specialized for tartaric stability: this is the first gum arabic designed specifically to address tartaric stability, with a unique responsiveness to instability, a feature not found in other available gum arabic.
Safety of use: unlike other additives, Complex Gum poses no risk of use and can be used without dosage restrictions.

Seyal gum arabic 20% ± 0.5%; sulfur dioxide 0.3%.
It does not contain GMO vegetables..

100 ml/hl with conductivity between 40 and 60 μS.
130 g/ hl with conductivity above 60 μS.
Warning: in cases of severe tartaric instability (ΔμS> 90), Complex Gum does not replace cold heat treatment, although it significantly lowers the instability g/hl with conductivity above 60 μS.
Warning: maximum legal dosage 130 ml/hl.

Complex Gum has a low bridging index, so it can be added before the last microfiltration.
