CMC Liquid

Carboxymethylcellulose solution that provides effective stabilization of the product and high inhibiting action against crystalline precipitation of potassium bitartrate.
CMC Liquid is a 10% solution of carboxymethyl cellulose (CMC) with a low degree of polymerization, resulting in a viscosity between 100 and 200 mPa/s. This product is distinguished by its remarkable degree of substitution, located between 0.7 and 0.8, which gives it an outstanding stabilizing ability and an effective ability to inhibit crystalline precipitation of potassium bitartrate. Main benefits of CMC Liquid include:

  • Long-lasting stability: unlike other stabilizers that offer limited protection against tartaric precipitation, CMC Liquid provides long-lasting action, ensuring stability even over the long term.
  • Easy to use: due to its low viscosity and liquid form, CMC Liquid is extremely easy to use and can be easily incorporated into the winemaking process.

10% carboxymethylcellulose solution.

5-100 g/hl (maximum legal dose).
Preliminary laboratory tests are strongly recommended.

The dose of CMC Liquid should be added while stirring or with a venturi tube, taking care to homogenize all the product in the mass.
It is recommended that CMC Liquid be added at least 48 hours before the last filtration.
Care is recommended when using CMC Liquid on wines with suspected protein or color matrix instabilities.

Store the product in a cool and dry place.
In case of partial use, re-seal thoroughly before storing under the specified conditions.
