Ali Starter Plus is a carefully balanced formulation designed to enhance the fermentation process in musts. Adding it to musts provides adequate amounts of essential nutrients and growth factors for yeasts, playing a critical role in preventing fermentation stuckness and hydrogen sulfide production.

Key ingredients:

  • Autolysate: this component is extremely rich in vitamins and amino acids, providing an essential source of nutrients that promote and enhance the flavor profile of yeast.
  • Diabasic Ammonium Phosphate (DAP): provides readily assimilable nitrogen in a rapid manner, helping to restore optimal levels of Readily Assimilable Nitrogen (RAN) and thus preventing fermentation arrests and sensory defects.
  • Vitamin B1: the presence of Vitamin B1 is crucial, as it is an essential constituent of coenzymes that participate in yeast metabolic reactions, promoting their activity.
  • Yeast peels: this component completes the nutritional profile and helps the cellulose absorb any fermentation inhibitors, contributing to the success of the fermentation process.


It should be noted that Ali Starter Plus does not contain ammonium sulfate, thus avoiding the increase in sulfates that could adversely affect the fermentation outcome.

Warning: 30 g/hl of Ali-Starter Plus provides 45 mg/hl thiamine (legal maximum limit: 60 mg/hl) and about 45 mg/l RAN (Readily Assimilable Nitrogen).

Dissolve the mixture at a ratio of 1:10 in cold water and add the yeast inoculum immediately afterwards.
