DAP

Food-grade salt that provides yeast with an easily assimilable source of nitrogen. It increases the free amino acid content in the must, promotes smooth fermentation and helps prevent fermentation stoppages.
Diammonium phosphate is a food-grade salt used as an assimilable nitrogen source for yeast. Its addition increases the PAN (Primary Amino Nitrogen) content in the wort, promoting a smooth and complete fermentation. It is particularly suitable for fermenting low-nitrogen substrates, which may otherwise lead to sluggish or stuck fermentations. The product provides nitrogen in a readily assimilable form, supporting both the initial phase and the proper progression of fermentation. FAN requirements generally range from 100 to 250 mg/L depending on the substrate type; the optimal dosage must be determined based on the analysis of assimilable nitrogen in the wort.

Diammonium phosphate (Food Grade).

30 g/hL provide approximately 60 mg/L of readily assimilable nitrogen (FAN/APA).
It is recommended to perform small-scale preliminary trials to precisely determine the optimal dosage.

Dissolve the DAP dose in water or must at a 1:10 ratio, then add it to the fermentation mass before or immediately after yeast inoculation.

25 kg bag.
Store in a cool, dry place.
