Beergum

Liquid Kodofan gum arabic specially selected for use in beer.
Beergum is a Kordofan gum arabic extracted from the Acacia Verek tree, specially selected for use in brewing. Its main functions and benefits in beer include:

  • Foam stabilization: Beergum plays a key role in stabilizing beer foam. It increases the viscosity of the foam, thus helping to keep it thicker and more persistent on the surface of the beer.
  • Improved surface tension: gum arabic helps to increase the surface tension of the beer. This is beneficial for foam formation and stability, as increased surface tension helps retain gas bubbles within the foam.
  • Slowing the release of CO2: Beergum can slow the release of carbon dioxide (CO2) from the beer. This may be desirable in some beer varieties, helping to maintain adequate carbonation and preserve the effervescent character of the beer.
  • Improved mouthfeel: the presence of Beergum can improve mouthfeel by imparting roundness and structure to the beer’s flavor profile. It thus contributes to a more pleasant overall perception during tasting.

Kordofan gum arabic in a liquid formulation.

From 20 to 50 g/hl to regulate foam
From 50 g/hl to stabilize foam
From 70 to 90 g/hl for a significant sensory effect.

Dissolve thoroughly in warm water, preferably at a ratio of 1:10.
In case of filtrations, add after the last step: the high molecular weight may adversely affect filterability.

1 kg bottle, 25 kg canister.
Store in a cool, dry place, away from heat sources.
Close the bottle carefully in case of partial use.

Gum arabic in beer: a precious ally

The use of gum arabic in brewing goes beyond the need for stability and clarity. Extracted from the acacia tree, this ingredient offers a unique combination of functionality, innovation and sustainability. Helping to shape beer in rich and intricate ways, gum arabic enriches the tasting experience with new levels of complexity.

Colloidal stability

Gum arabic acts as a colloidal stabilising agent, preventing the formation of unwanted precipitates during storage and transport. This ensures a stable beer over time, ideal for extended storage periods and export under varying conditions.

Clarity and consistency

Another crucial aspect is its positive impact on beer clarity. Gum arabic helps keep the beer clear, preventing the formation of unwanted sediment. It also improves the consistency and stability of the foam, positively influencing the mouthfeel and ensuring a satisfying tasting experience.

Binding agent

In the brewing process, gum arabic acts as a binding agent, stabilising yeast particles and other sediments. This not only facilitates filtration, but also helps to ensure a uniform, high-quality beer.

Compatibility with different beer varieties

The versatility of gum arabic makes it suitable for a wide range of beer styles. From Ales to Lagers, from light to stout beers, gum arabic can be adapted to enhance the specific characteristics of each variety.

Thus, the strategic use of gum arabic in brewing results in high quality, stable, clear beers with a pleasant texture, enhancing the overall tasting experience for beer enthusiasts.
