Greenmix is an organic yeast peel preparation obtained through a specific extraction process that facilitates the release of particular parietal polysaccharides. These polysaccharides have the ability to stabilize many phenolic compounds, preventing color precipitation in wines. Greenmix is produced using organic yeast biomass harvested at the end of the growth phase, which is the ideal time to achieve high functional content. The application of Greenmix to wines has several practical consequences:

  • Increased color: Greenmix contributes to more intensely colored wines.
  • Softness and structure: reduces the ability of tannins to interact with saliva proteins, resulting in softer, more structured wines.
  • Yeast nutrition: Greenmix provides a range of essential nutrients to yeast, including vitamins, alpha-amino acids and minerals, which are essential for their balanced cellular metabolism.
  • Prevention of fermentation problems: due to its absorptive power against compounds toxic to yeast, Greenmix helps prevent stunted or arrested fermentations.
