PRESSING
Once the press is loaded, Greengel is added to the raw must.
START OF FERMENTATION
Once the clear must is obtained, fermentation is started with Greenferm yeast and Complex Vit Bio activator.
MID-FERMENTATION
Carry out light oxygenation and employ Greenfeed.
¾ OF FERMENTATION
If necessary, add Greenmix.
POST-FERMENTATION
After alcoholic fermentation is complete, assess the progress of malo-lactic fermentation, if any, and act accordingly.
Carry out coarse lees separation and decant.
STABILIZATION with greenfix
To avoid color precipitation after bottling, add Greenfix one month before eventual use.
STABILIZATION with Greengum
To improve the organoleptic sensations of roundness and smoothness, add Greengum one month before eventual use.
STABILIZATION with Complex Gum Bio
To prevent tartaric precipitation and improve feelings of fullness in wines, add Complex Gum Bio one month before any use.
