Complex Vit Bio

Complex Vit Bio is a nutrient complex obtained from cell walls and extracts of Saccharomyces cerevisiae yeast produced from organic raw materials.
Complex Vit Bio is a nutrient complex obtained from cell walls and extracts of the yeast Saccharomyces cerevisiae, produced exclusively from organic raw materials and in accordance with the strict biological requirements set by European Regulation No. 203/2012. Key benefits of Complex Vit Bio:

  • Supply of Alpha-Aminic Nitrogen: this nutrient complex represents a valuable reserve of alpha-aminic nitrogen, which is assimilated gradually and regularly by the yeast during all four stages of alcoholic fermentation.
  • Optimal aroma production: Complex Vit Bio promotes the regular production of aroma esters, the development of which is closely related to the presence of alpha-amine nitrogen sources. This contributes to improving the aroma profile of the final products.
  • Versatility of use: the formulation of Complex Vit Bio allows flexible use at different stages of fermentation:
    • Beginning of germentation: amino acids with immediate assimilation, such as arginine, isoleucine and leucine, improve nitrogen conditions from the early stages. This promotes an early start of the fermentation process and prevents unwanted arrests or slowdowns.
    • Before malolactic fermentation: Complex Vit Bio is ideal for the development of lactic acid bacteria, which use amino acid nitrogen as their main source of nutrients, thus facilitating malolactic fermentation.

Autolysed yeast rich in amino acids, vitamins and cell walls (Saccharomyces cerevisiae).

10-30 g/hl according to the nutritional characteristics of the must (RAN content), increase the dose proportionally up to 40 g/hl according to difficult fermentation conditions.
Warning: 30 g/hl of Complex Vit Bio provides about 9 mg/l of RAN.
Maximum authorized dose: 40 g/hl.

Dissolve the product directly into the must at a 1:10 ratio and add to the mass with pumping over in the air for at least 20 minutes.
In case of stoppages, use Complex Vit directly into the yeast rehydration liquid and introduce the product along with the yeast.
