Complex Gum Bio

Seyal gum arabic obtained from organic farming in liquid formulation.
Complex Gum Bio is a Seyal gum arabic with high stabilizing power designed specifically to prevent the formation of potassium bitartrate in wines. This product is distinguished by its ability to reduce the conductivity (μS) of wines, ensuring their long-term stability. The main benefits of Complex Gum Bio are:

  • Advanced stabilization: Complex Gum Bio is the first gum arabic developed specifically to address tartaric stability, offering a unique responsiveness to tartaric instability that is not present in other available gum arabic.
  • Safety and no dosage restrictions: this product does not have the risks associated with the use of carboxymethyl cellulose and can be used without dosage restrictions.
  • Advanced microfiltration: Complex Gum Bio undergoes rigorous microfiltration during production, preserving the wines’ filterability index. This allows the product to be added even before the last filtration step.
  • Role as a protective colloid: Complex Gum Bio acts as a protective colloid, composed of type II arabinogalactan polysaccharide associated with a glycoprotein. This characteristic confers exceptional anticoagulant protective power, particularly effective against polyphenolic substances (including those with low molecular weight) and protein substances, in both white and red wines intended for aging.

50 ml/hl will lower conductivity by about 50-70 ΔµS on white and rosé wines.
Conduct conductivity test after addition of Complex Gum Bio.
Warning: 100 ml/hl of Complex Gum Bio provides about 4 mg/l of SO2.

Complex Gum Bio should be added to wine before or after the last filtration or microfiltration leading up to bottling.
Do not make clarifications after the addition of Complex Gum Bio.
