Potassium sorbate

Food additive, identified by code E202, its antimicrobial activity is concentrated on yeasts and moulds.
Potassium sorbate is the potassium salt of sorbic acid and is preferred in aqueous solutions due to its high solubility compared to sorbic acid. Prized for its antifungal and antibacterial properties, potassium sorbate is a widely used preservative in the food industry.

In addition to the dairy sector, it has applications in beverages. Its potent antifungal action is comparable, if not superior, to that of benzoates, especially in solutions with a pH between 4.0 and 6.0. Under these conditions, the indissociated form of potassium sorbate is particularly active, giving it an advantage in preventing mould growth, which tends to develop in acidic environments.
