Carboxymethyl cellulose (CMC) is a cellulose derivative in which some hydroxyl groups are replaced with carboxymethyl groups. This versatile compound is widely used in the food industry due to its unique properties, including its hydrophilicity, viscosity, ability to form grease-resistant films, and excellent stabilising and bonding ability. Some of the main characteristics of carboxymethyl cellulose (CMC):
  • Easily soluble in water.

  • It is neither a surfactant nor a foaming agent.
