GUM ARABIC

Gum arabic is a natural gum also known as gum acacia because extracted from two species of acacia sub-Saharan Africa: Acacia Senegal and Acacia seyal.

As all the gums and resins of vegetable origin, is produced by the plant in response to a “wound” carving the branches of the same plant. After a few months from the incision can be derived from the dried drops of resin, yellow-amber in color with a moisture content between 8 and 12%.

It’s composed of a complex mixture of polysaccharides (PM 250,000-300,000) and glycoproteins that confer one of its most important properties.
